The traditional Japanese sweet mochi consists primarily of rice: steamed rice is pounded and kneaded until it takes on a soft, elastic consistency. Small balls are then formed from this and filled with various fillings.
The dough for these mochi was mixed with matcha (finely ground green tea) and then the mochi was filled with a paste made from azuki beans (red beans). This creates a great taste between the bitter freshness of the matcha and the natural sweetness of the red bean paste.
